This is still really early in development but already looks beautiful using hand-drawn backgrounds with 3-D characters and leaves.

Wonder Boy: The Dragon’s Trap

This is a reverse engineered remake of Sega’s Wonder Boy III: The Dragon’s Trap.  The developer took apart the code in the original to see how it all worked and has teamed up with an artist to create an authentic (but enhanced) follow up.  You can read more about the process of deconstruction on their dev log here.
